Ingredients
1/2 red bell pepper, seeded and ribs removed, diced
1/2 orange bell pepper, seeded and ribs removed, diced
1/2 yellow bell pepper, seeded and ribs removed, diced
1 c. cucumber, peeled & diced
1 (15 oz.) can pinto or navy beans, strained and rinsed
1 (15 oz.) can black beans, strained and rinsed
1 (15 oz.) can kidney beans, strained and rinsed
1/4 c. sweet or red onion
2 tbsp. extra virgin olive oil
2 tbsp. apple cider vinegar
Juice of 1 lime
Juice of 1 lemon
1 tsp. ground cumin
1 1/2 tsp. sea salt
1/2 tsp. black pepper

For lime, lemon, salt and pepper, those can be “to taste”
