Ingredients
3 c old-fashioned, rolled oats
1 c currants
3/4 c sliced almonds
3/4 c chopped hazelnuts
3/4 c pepitas (pumpkin seeds)
3/4 c unsweetened, shredded coconut
1/4 c brown sugar
1/4 c water
4 T unsalted butter
2 T maple syrup
1 t ground cinnamon
1/2 t salt
Zest of one orange
Preparation
- Preheat oven to 300 F.
- In large bowl, combine all ingredients through coconut. Mix well.
- In a small saucepan, combine sugar, water, butter, maple syrup, cinnamon, salt and zest. Heat until bubbly and sugar dissolved.
- Pour hot liquid over dry ingredients, and mix until coated.
- Spread granola on a baking sheet. Bake 20 minutes, stirring at least once halfway through, until golden brown. Let cool before storing.
