Preparation
Pork is browned quickly on a hot pan with salt and crushed garlic. This should take about 4 minutes. One minute per side. Then oven cook for 15 min at 180, take out promptly and wrap in tin foil to rest for ten minutes to 20 minutes. Nice with tomatoes and shallots which you can cook in the same oven dish (but don’t fry the tomatoes or the juices won’t allow the meat to brown). Serve with spaghetti!
