Ingredients

8-10 LB turkey breast

2 qts. water

2 qts apple cider/juice TJ

6 1/4" sl fresh ginger

1 tbsp whole peppercorns

1 tbsp whole allspice

2 tsp whole cloves

4 cinnamon sticks -broken

1/3 c maple syrup

1/3 c kosher salt

Preparation

  1. mix 2c water w/ spices, syrup,& salt in saucepan
  2. heat till salt desolves –mix 3.add ice water to cool ( part of remaining water 4.put in lg bowl add apple cider and remaining water-mix
  3. put turkey in 2 gal. ziplock -add brine
  4. brine for 24 hrs–DO NOT RINSE BEFORE YOU RST
