Ingredients
3.5 pounds apples, tart, peeled, in 1/4 inch slices
1.5 teaspoons ground ginger
3 tablespoons tapioca
1 teaspoon lemon zest
1/2 cup brown sugar
2 tablespoons Optional: rum
1/2 teaspoon Optional: vanilla
1 recipe double pie crust
Preparation
Preheat 425. Mix apples with everything else. Fill pie and place top crust. Bake 20 min, then 350 for 25-30 min until brown and bubbly.
