Ingredients
2 tablespoons dark rum
2 tablespoons water
1 cup apple sauce
2 cups flour
1 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1 stick butter unsalted softened
2 large eggs room temperature
1 teaspoon lemon rind, grated
1 cup applesauce
1 apple, peeled, cored and chopped
1/2 cup raisins
1 cup Sugar
Preparation
preheat oven to 350F
Combine flour, baking soda, salt, spices. Set aside.
Cream butter and sugar until light and fluffy.
Add eggs one at a time beating well after each addition.
Beat in lemon rind.
add half of flour mix, combining. the half of applesauce. Repeat until combined.
Stir in raisins and diced apple.
Pour into well greased 9 x 5 inch pan. Bake 1 hour and 5 minutes. Cool 10 min before turning out.
Combine rum, water and raisins in a pot. Simmer over med heat gentle about 5 min.
Applesauce: 4 apples, unpeeled, quartered and cored. 1/2 cup water. 1/4 cup sugar.
