Ingredients
1/2 c Butter (room temp)
3/4 c Cream Cheese or Quark (room temp)
2 Eggs (room temp)
1 tsp Vanilla
1 c Brown Sugar
1 1/2 c Flour (can use spelt)
1 1/2 tsp Baking Powder
1/2 tsp Salt
1/4 c Sugar (raw or turbinado best)
2 tsp Cinnamon
1/4 tsp Nutmeg
3 c Apples - peeled, cored and sliced (can use more)
Zest of one lemon
Juice of 1/2 lemon
Preparation
Preheat oven to 350 degrees
Beat brown sugar and butter until well combined. Add cream cheese or quark and mix well. Add eggs and vanilla and beat until well mixed.
In separate bowl, combine flour, baking powder and salt. Add to butter mixture.
Slice apples into large bowl. Add lemon zest and juice. In small bowl, combine 1/4 c sugar with cinnamon and nutmeg. Mix 2 tbs of sugar mixture into apples. Add batter to apples and stir to combine well. Pour into prepared 9" springform pan and press until level. Sprinkle with remaining sugar mixture. Bake for 1 hour and 15 min or until cake pulls away from the sides of the pan (check at 1 hour).
