Ingredients

olive oil

1 large shallot, sliced

3-4 cloves garlic, minced

4-6 oz sliced crimini mushrooms, chopped more

1/2 bunch kale, julienned

4-6 oz mung beans sprouts

3-4 green onions, sliced

5 eggs, beaten

soy sauce

Preparation

Heat some olive oil in a large skillet. Saute the shallots until softened Add the garlic and saute another minute or so Add the mushrooms, and saute until softened and a little browned Add a little soy sauce to season Add the kale and saute until bright green and softened a bit Add the sprouts, and saute until translucent Season the eggs with white pepper and soy Add to skillet and stir until cooked

Next time try a sauce made with: 1 Tbs oyster sauce, 1 tsp vinegar, 1 Tbs. soy sauce and 1 tsp. sesame oil.
