Ingredients
2 cups Sugar
1/2 pound Butter
4 cups Plain Flour
6 pieces Eggs
1 teaspoon Baking Powder
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 teaspoon Vanilla
1 pound Crystalized Cherries
1.5 pounds White Raisins
2 slices Crystalized Pineapple
4 cups English Walnuts
1 cup Cooking Sherry
Preparation
Cut cherries, raisins and pineapple into small pieces and put into a cup of Sherry and let stand overnight
Combine vanilla, butter and sugar and mix until creamy
Sift together all the dry ingredients and add to Sugar and butter mixture
Add fruit and stir until combined
Pour into a tube pan
Bake 2hrs at 275deg
Use straw test for doneness
