Ingredients

2 - 3 zucchinis

1 ripe avocado

1/2 cup fresh basil

1/2 cup cilantro

1/2 cup parsley

1/4 cup sundried tomatoes (not in oil)

1 clove garlic

1 lemon, juiced

pinch of sea salt

Preparation

spiralize zucchini to make noodles Sprinkle with salt and toss to coat. Place on some paper towels and allow the water to drain while you prepare your sauce. You may prefer to allow the noodles to drain for a few hours at room temperature. Combine the avocado, herbs, garlic, lemon juice, and a pinch of sea salt in the food processor and process until smooth. Toss the noodles with the sauce.
