Ingredients
1 pound Pasta
1 Ripe Avocado, halved, seeded, and peeled
1.5 cups Fresh basil
2 cloves Garlic
2 tablespoons Fresh lemon juice
.3 cups Olive oil
1 cup Cherry tomatoes, halved
2 ears Fresh corn, removed from cob
.5 cup Pine nuts
Preparation
In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
To make the avocado sauce, combine avocados, basil, garlic and lemon juice in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified; set aside.
In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn.
Mince raw pine nuts in small food blender, stop just before paste forms. Toast minced pieces at 350 until golden brown.
Sprinkle tasted pine nuts on top of pasta
