Ingredients
3-4 large handfuls of baby spinach
1 large egg
dash salt and pepper
chile pepper flakes
olive oil
Preparation
Spray a non-stick pan lightly with olive oil and preheat to medium. Toss in 3-4 handfuls of fresh baby spinach, sprinkle with chile pepper flakes to taste, and saute until they wilt. Make a nest in the wilted spinach and crack one egg into that nest. Cover with a clear lid, and cook until the whites are opaque and set, but the yolk is runny. Slide onto a plate, lightly season with salt and pepper, and enjoy.
