12 Rashers batch Bacon

Preparation

Slice apricots and simmer on stove top, covered, for 2 hrs or until soft.

Mash apricots and spread thin layers on parchment paper lined cookie sheet pans. Bake at 175F for 2 hours or until juices have evaporated.

Place bacon strips on cookie sheets. Place a 2nd cookie sheet on top of the strips so bacon will remain flat. Bake at 350F until crisp.
