Ingredients

3 slices bacon

1-1/2 tsp. Garlic, finely chopped.

3 tbsp. Ricotta Cheese

1-1/2 tbsp. Grated Parmesan

1/2 tsp. fresh thyme

12 crimini mushrooms, stemmed, gills removed.

3 tbsp. Panko bread crumbs.

Preparation

Cook bacon until crisp. Remove from pan, crumble. Reserve approx. 1 tbsp. bacon drippings, cook garlic in drippings until it begins to brown. In a small bowl, combine garlic and drippings, ricotta, thyme and parmesan. Mix well. Spoon cheese filling into mushrooms, place in Sprinkle panko over filled mushrooms. Bake at 350 for 25 minutes. Move to top rack, broil until breadcrumbs brown.
