Ingredients

4+ lb beef brisket; cayenne (1/2 tsp); 1 tbl celery salt; 2 tbl chili powder; 1 tbl garlic powder; 2 tbl dry mustard; 1 tbl onion powder; 1/2 tsp thyme; 1 tbl suger; 2 tbl Kosher; 1 tbl black pepper. 4 oz liquid smokw; 8 cups beef stock; 2 large onions (sliced and carmelized.

Preparation

Mix dry ingrediants and rub ocer beef. Seer beef. Roast 50 - 60 minutes. Remove. Boil liquid smoke and broth. Deglaze pan with sherry. Pour over onions. Reduce oven to 335, Pour liquids over brisket. Return to oven Cook up to 3 hours.

Remove and rest brisket. Reduce and thicken stock. Pour over meat. Slice and serve
