Ingredients
1/4 cup olive oil
2 1/2 cups white onion
1 tablespoon garlic minced
1 tablespoon Crushed red pepper
1 1/2 tablespoons oregano
1 cup vodka
2 quart tomatoes plum
1/4 teaspoon kosher salt
1 pound penne pasta
1/2 ounce parmesan cheese
1/4 cup heavy cream
2 tablespoons Fresh oregano
Preparation
heat oven to 375 degrees
heat oil, add onion, and garlic, cook for 5 minutes
add red pepper flakes and dried oregano, cook for 1 more minute/
add vodka and simmer 5-7 minutes
meanwhile, drain the tomatoes through a sieve and crush them into the pan with your hands
add salt and pepper, cover the pan with a lid and place in oven for 1 1/2 hours. remove from oven and let cool for 15 minutes.
place tomato mixture in a blender and puree in batches until smooth, return to pan.
cook pasta as per instuctions
reheat sauce, add 1 Tbsp fresh oregano and enough heavy cream to make the sauce creamy, simmer for 10 minutes.
