Ingredients
2 c Flour, sifted - preferably King Arthur brand
1/4 c Wheat Germ
1 t baking powder
1 t baking soda
1/4 t salt
6 T butter, softened
1 1/4 c sugar
3 or 4 ripe bananas, mashed
2 eggs, beaten
1/4 c milk
1/2 c chopped walnuts (optional)
Preparation
Preheat oven to 350
Sift together dry ingredients, set aside
Mash together bananas, eggs, milk
In a stand mixer, blend butter and sugar until creamy. Add banana mixture and mix until combined. Add dry ingredients and mix on slow until just incorporated.
Pour batter into a greased loaf pan and bake for 60 minutes. Bread is done when a toothpick can be removed clean
