Ingredients

1/4 c red wine vinegar

2 Tbsp. dijon mustard or Balsamic vinegar

1 Tbsp minced shallot

2/3 c olive oil

optional: add any herbs dill, parsley, tarragon, chives

Preparation

Whisk together the first 3 ingredients. Slowly drizzle in the oil while whisking. add pepper to tast.
