Ingredients

1 Onion

2 Zucchini

8 Eggs

1/2 cup Feta

1/4 teaspoon Kosher Salt

1/8 teaspoon Black Pepper

Preparation

Coat a 10 inch Skillet with oil.

Chop Zucchini and Onion into small pieces.

Whisk Eggs, Salt and Pepper in a small bowl.

Cook Zucchini and Onion until slightly brown. 4 to 5 minutes.

Pour Egg mixture into skillet over Zucchini and Onion, Top with Cheese.

Cover pan and cook over low to medium heat till the edges begin to brown and the center sets and has slightly puffed up.

Turn Frittata onto serving platter, add tomato and basil if desired. Cut into wedges to serve.
