Ingredients
2 T. Olive oil
2 lbs boneless chuck roast cut into chunks
1 tsp. salt
3 onions cut in half and then fourths
4 cloves of garlic, minced
2 T. tomato paste
2 cups beef stock
1 tsp. black pepper
3 thyme sprigs
8 oz button mushrooms
12-15 baby carrots
4 Yukon gold potatoes
2 tablespoons all purpose flour
Preparation
Put everything in pot except flour.
Cook on low 8 hours.
Discard old thyme sprigs. Stir in flour. Add fresh thyme as a garnish.
