Ingredients
8 oz beef sirloin
3/4 lb (12 oz) broccoli
4 oz button mushrooms
2 cloves garlic
1 T sake, dry sherry or vermouth
1 T rice vinegar
1 T sesame oil
1 T water
1 T granulated sugar
2 tsp cornstarch
1 T vegetable oil
Preparation
SLICE beef into thin, bite-sized strips. Wash broccoli and divide into florets, discarding the rest of the broccoli. Cut mushrooms in half. Peel and finely slice garlic. In a small bowl, thoroughly mix together sake, rice vinegar, sesame oil, water, sugar and cornstarch.
HEAT vegetable oil in a wok over med-high heat. Add garlic and cook until fragrant (30 sec to 1 min).
ADD mushrooms and sauté lightly. Stir in broccoli and beef and sauté to brown beef. Cover and cook until broccoli is crisp tender and beef is cooked through, about 5 minutes.
ADD sake-cornstarch mixture and stir until sauce thickens.
