Ingredients
2 (12 oz.) white ales
1/4 cup honey
3/4 cup unsalted butter
1 cup powdered sugar
1/4 cup brown sugar
1 large egg
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons ground coriander
1 orange, zest only
1/2 teaspoon baking soda
1 cup white chocolate chips
Preparation
Add the beer and honey and cook it down to a thick syrup (about 1/3 c. liquid).
Whisk together flour, spices, baking soda, and zest.
After syrup has reduced and cooled, cream together the butter and sugars, then add in egg and vanilla.
Stir in half of the dry ingredients, followed by the syrup, then the remaining dry ingredients. Lastly, mix in chocolate chips.
Bake for 18-20 minutes at 350 degrees Fahrenheit. Rotate the cookies halfway through.
