Ingredients

2 eggs (room temp)

3 very ripe bananas (plus one yellow banana)

1/3 c butter (soft)

1 tsp vanilla extract

2/3 c dark brown sugar

1 3/4 c flour (spelt, whole wheat, white or a mix - use slightly less if using all whole wheat)

1/2 tsp salt

2 tsp baking powder

Preparation

Add first 5 ingredients to a blender, blend until smooth. Combine dry ingredients in large bowl. Add blended ingredients to dry ingredients and hand mix until combined. Pour into buttered and floured glass loaf pan. Slice yellow banana in half lengthwise, and arrange on top of batter. Bake 45min to an hour @ 350 degrees. (Check at 45 min).
