Ingredients

2 lbs head cabbage - quartered, cored and cut crosswise into 1/8 inch thick slices

1 1/4 cups apple cider vinegar

1 cup sugar

1 cup shredded carrots

4 green onion stalks, thinly sliced

1/4 cup mayonnaise

Preparation

  1. Add cabbage, vinegar & sugar together in a large bowl & toss to combine.
  2. Cover & chill in fridge for 30 minutes
  3. Toss mixture again to incorporate, cover & chill for an additional 30 minutes.
  4. Drain the cabbage of all excess moisture.

*You can stop at this step the day before serving the slaw & chill the cabbage in the fridge before completing the next day.

  1. Add carrots, onions & mayo - toss to combine.
  2. Season to taste with pepper & other desired flavors/seasonings
  3. Serve!
