8 cloves Garlic
8 Medium potaotes
4 teaspoon kosher salt
1/4 cup good beer
1/4 cup unsalted butter
1/2 cup heavy cream
1/8 teaspoon pepper
Preparation
Best mashed potatoes ever: Roast 8 cloves of garlic, cool, peel, mash. Cut 8 medium (7-8 oz.) potatoes into 1 inch pieces, put ’em in a pot, cover ’em with water and 1 tsp kosher salt. Boil until tender (20 minutes). Drain and mash. Add 1/4 cup unsalted butter cut in pieces, 1/2 cup heavy cream, and 1/4 cup good beer. Mash until the butter’s melted. Add mashed roasted garlic, 1 tbsp kosher salt and 1/8 tsp pepper.
When you roast the garlic, toss it with a little olive oil. If you’re in a hurry, 15 minutes in a 450 degree oven’ll do, but some of your garlic might get a bit crunchy (but still taste good). If you have more leisure, an hour or so at 325 is good.
