Ingredients

1lb 4oz spinach, washed

1 onion, chopped

3 eggs, beaten

16oz ricotta cheese

10oz Parmesan cheese, freshly grated

1/4 teaspoon freshly ground black pepper

1/4 teaspoon freshly grated nutmeg

2 9-in gluten-free pie shells

Preparation

  1. Preheat oven to 350°F
  2. Steam the spinach, squeeze to drain well and roughly chop.
  3. In a large bowl, mix the onion, beaten eggs, both types of cheese, pepper & nutmeg, and mix the cooked spinach.
  4. Transfer mixture to one pie dish. Roll remaining mixture in sections of other pie shell.
  5. Bake in preheated oven for 25–30 minutes.
