Ingredients
1 lb. Chorizo
3lbs. Beef Stew Meat or Other cuts (Diced 1/2" - 3/4"cubes)
1/4c. Flour
1/2 lb. Smokey Bacon Chopped
2 Lrg. Onions Diced
6 Tbsp. Italian Seasoning
2 cans Diced green chilies
2 6oz. cans Tomato Paste
3 8oz. cans Tomato Sauce
2 8oz. cans Crushed tomato
3 - 4 tablespoons granulated garlic
1 tsp. salt
1 tsp. Adobo (Optional)
2 tbsp. Chile Powder
1/2 Bottle Zinfindel Wine
32oz. Beef Stock
Preparation
Saute diced onions with bacon in large slow cooker insert. Toss flour, salt and cubed beef together. Add to onion mixture and brown. Add the zinfandel and bring to a simmer for a minute. Add all of the rest of the ingredients and let return to a simmer again. Remove from stove and put in the slow cooker to cook on low for about 4 hrs.
