Ingredients

2 c. Corn kernels

1 c chopped red onion

1 can black beans rinsed & drained

1 red bell pepper diced

1/2 c. Loosely packed chopped cilantro

1 -2 avocado diced

Dressing:

1/4 c. + 2 tbsp. Vegetable oil

2 tbsp freshly squeezed lime juice

2 tbsp. Red wine vinegar

2 tbsp honey

3/4 tsp cumin

1 Clove garlic finely chopped or minced

2 chipotle peppers in Adobe sauce chopped

1/4 tsp oregano

Salt and freshly ground pepper

Preparation

Mix salad ingredients in large bowl adding avocado last or just before serving. Mix dressing ingredients in jar. Shake well. Add to sald ingred. a few minutes before serving.
