Ingredients
1 pound Dried Black Beans
1 Onion, chopped
6 cloves Garlic, minced
8 slices Uncooked Bacon, diced
1 cup Cilantro, chopped
1 1/2 teaspoons Whole Cumin Seed
1 teaspoon Dried Oregano
1 teaspoon Salt
1/2 teaspoon Pepper
4 quarts Water
Preparation
Sort beans and place in a large heavy kettle. Add enough water to cover. Place lid on the kettle and bring to a boil. Boil hard for exactly one minute. Remove from heat. Let stand, covered, one hour.
Drain beans in a colander. Put beans back into kettle. Add all the remaining ingredients, and enough water just to cover.
Simmer beans over low heat for 3-4 hours, or until they are tender. Add small amounts of water as necessary during cooking. Finished beans should be thick, not soupy.
Adjust salt and pepper to taste.
