Ingredients
4 slices Bacon
2 pounds Red Potatoes
1/2 cup Olive Oil
3 tablespoons White Wine Vinegar
1 bunch Chopped Green Onions
1/2 teaspoon Salt
1/2 teaspoon Black Pepper
2 ounces Blue Cheese Crumbles
Preparation
Crumble bacon.
Add potatoes to a large pot of salted boiling water and cook for 15 minutes.
Drain, cool, and chop potatoes.
In a large bowl, whisk together the oil, vinegar, green onions, salt, and pepper.
Add potatoes, bacon crumbles, and blue cheese crumbles. Toss to coat.
