Ingredients

2 2 Ripe Bananas, crushed

1 cup 1 Cup Fresh or Frozen Blueberries, (if using frozen, let thaw for about 20 minutes)

1 1 Egg

1 cup 1 Cup All Purpose Flour

1 1/2 cups 1 1/2 Cups Oats

2/3 cup 2/3 Cup Brown Sugar

1 teaspoon 1 Tsp. Baking Powder

2 teaspoons 2 Tsp. Cinnamon

1/2 cup 1/2 Cup Butter

1 teaspoon 1 Tsp. Vanilla

Preparation

Heat oven to 350 degrees. Crush bananas in a small bowl and set aside.

Beat together sugar and butter

Beat in egg and vanilla.

Stir in crushed bananas and blueberries.

In a medium bowl, mix together the flour, oats, cinnamon and baking powder.  Stir into banana mixture.

Grease 12 muffin tins, or use muffin liners.  Fill about 3/4 way with batter

Bake for 20 minutes or until toothpick inserted in the center comes out clean. This recipe makes 12 muffins.
