Ingredients
Base
2/3 cup butter
2/3 cup brown sugar
1 1/3 cup fine unsweetened coconut
1 1/2 cups flour
Filling
1 1/2 cups blueberries
1/2 cup white sugar
1/2 teaspoon of cinnamon
1 tablespoon of lemon juice
Topping
500 mL whipping cream
Preparation
Preheat the oven to 350 degrees
Prepare the filling:
Mix together the white sugar and the cinnamon. Toss the blueberries with lemon juice and then coat with the sugar mixture. Set aside.
Prepare the base:
Cut together butter, brown sugar, coconut and flour until well combined. (It will be fairly dry) Press into the bottom of an 8" x 8" baking pan. (Press quite firmly)
Spread filling on top of base and bake for 30 minutes. (The corners will brown lightly. Don’t overbake or the base will become too crumbly when cutting.)
Chill the pan thoroughly.
When pan is completely cool, whip cream, spread on top and cut into squares.
