Ingredients
boneless, skinless chicken thighs ( # according to how many you are going to feed)
large sweet onion, chopped ( amount depends on how many thighs you have and how much onion people like)
olive oil - just to cover the bottom of the pan and sweat the onion
10-15 whole cloves -skinned garlic
1 cup +/- white wine
? chicken broth
s+p
other flavorings you might like: lemon juice, tomato paste, curry, thyme
Preparation
1.remove as much fat as possible from thighs, roll back up into thigh shape, salt and pepper them
Sweat chopped onion in olive oil until soft
make room and sort of brown thighs on both sides., They will not really brown as there is no skin
Add 10-15 garlic cloves (I buy already peeled garlic and never add enough cloves to the pot, they are so good
Add white wine a cup or more
bring to a boil, turn down the heat to a bare simmer and cook for an hour (?) If becomes too dry add more liquid: water or chix broth. (More wine if you are going to continue cooking for awhile. otherwise the added wine gives this lush chicken recipe a harsh taste.)
