Ingredients
8 boneless chicken thighs
3TBS olive oil
1diced yellow onion
3sliced cloves of garlic
1tsp turmeric
1/2tsp cumin
1/2tsp coriander
Red pepper flakes
1/4 tsp cinn
1bay leaf
2cups chicken broth
2tsp lemon zest
3TBS lemon juice
1diced and sautéed sweet potato
8 artichoke hearts
1/2 cup green olives
2TBS chopped cilantro or mint
Preparation
Brown chicken in oil and remove. Add onions and cook til brown. Sautéed garlic for 1 min and add spices, cooking another minute. Clean pan with 1/4 cup broth. Add 13/4 cups broth, lemon zest, 2TBS lemon juice. Cover. Simmer 15 min. Add chicken, potatoes, artichokes and olives. Simmer uncovered to heat chicken. Add rest of lemon juice. Garnish and serve.
