Ingredients
4 2x8: pieces boneless flanken
kosher salt and pepper for sprinkling
oil
1 1/2 c. BBQ sauce
1 1/2 c. apple juice.
Preparation
Preheat oven to 300 F. Salt and pepper flanken. Sear in hot oil 2 min.per side. Transfer to a snug baking pan. Whisk together BBQ sauce and apple juice and pour over meat. Cover tightly with 2 layers of saran wrap, then cover the wrap with 2 layers of foil. Bake for 3 hours. Remove from oven. Raise temp to 375 F. Before serving, brush ribs with a thin layer of BBQ sauce and bake for an additional 20-30 min.
