Ingredients

2 cups of flour;

1/4 cup rye flour;

Salt & sugar;

2 eggs;

11 tablespoons butter cut into small pieces

Preparation

Dough: mix flours, pinch of salt and sugar and whisk; mix in butter until small peas form; In a bowl, mix one egg with 3 tablespoons of cold water; pour slowly into mix; if dry, add small amounts of water until adheres; wrap in plastic and refrigerate for 1 hour. Egg Wash: whisk egg and 2 tablespoons cold water. Cook brats. Roll out dough into 12"x18"X11/4" - cut into 1" wide strips and wrap around brats. Wipe with wash and add sea salt. Bake @424 for 15-20 minutes
