Ingredients
6 cups chicken stock
1 Medium onion (chopped)
4-5 cups broccoli (chopped)
1 teaspoon garlic powder
1/2 teaspoon onion powder
salt (to taste)
4 tablespoons butter
6 tablespoons flour
3 cups cream or whole milk
3 cups shredded cheddar cheese
Preparation
Step 1 In a large pot over medium high heat, cook Chicken stock, all but 1 cup of broccoli, onion, garlic and onion powder, and salt until veggies are tender. Step 2 In a separate pot melt butter and whisk in flour. Cook for one minute over medium heat. Slowly add cream (or milk) while whisking. Continue to cook, stirring occasionally until mixture thickens. Add to Pot of veggies along with cheese and remaining cup of broccoli. Stir together and let simmer until thickened. Garnish with more cheese is desired.
