Ingredients
6 cups broccoli florets & stems
12 oz. mushrooms
1 pkg. ramen noodles, crumbled
and seasoning packet
1/2 cup yogurt
1/2 cup mayo
2 eggs
1 1/4 cup shredded cheddar
1/3 cup blue cheese dressing
1/2 tsp salt
1 1/2 tsp pepper
Preparation
Par boil broccoli with salt, remove to ice bath. Saute mushrooms in butter, turn off heat and add broccoli, mayo, yogurt,dressing, eggs, ramen, seasoning and 1/2 the cheese. Stir and put into small casserol dish,sprayed with nonstick oil.Pack into place with bottom of smaller baking dish. Top with pepper and remaining cheese. Bake for 45 minutes with lid on at 350 degrees. Remove lid and cook for 5 minutes more, cool for 30 minutes before serving
