Ingredients
1 cup Bulghur Wheat
1-3/4 cup Water
1 tablespoon Olive Oil
2 Leeks, sliced thinly
8 Cherry Tomatoes, quartered
1/2 tablespoon Butter
4 ounces Feta Cheese
Preparation
Bring water to boil. Add bulghur wheat. Cover and simmer for 20 minutes.
Heat olive oil and saute leeks with some salt until browned.
Add cherry tomatoes and cook until softened.
Add butter and saute for another minute or so.
Add cooked bulghur wheat.
Turn off heat and crumble feta cheese in and combine.
Season to taste.
