Ingredients

2 T. Olive oil (divided)

2 lbs. ground Turkey

1 small butternut squash cut into 1/2" dice

2 med. onions diced

2 cans light beer

2 cans black beans

2 cans diced tomatoes

2 t. smoked paprika

2 T. oriental chili powder

2 T. chili powder

Grated cheddar cheese for serving

Sliced green onion tops and whites for serving

Preparation

Heat 1/2 of oil in large pot over med. heat. Saute turkey until brown. Remove turkey from pot. Add remaining oil and heat over medium heat. Add onions and squash and saute until onions are soft, 5 to 7 min. Add beer and bring to a boil. Simmer for five minutes. Add paprika and chili, simmer 2 more minutes. Add remaining ingredients and turkey to pot. Add water until covered. (I like my chili hot feel free to add less chili powder) Bring to a boil and simmer for 30 minutes until squash is tender. Serve with cheese and green onions.

I made 1/2 of this recipe and was perfect amount for two with a bowl leftover for lunch.
