Ingredients
1 c. cornmeal
1 c. flour (rice/corn)
1/4 c. sugar (granulated/brown)
1 1/2 tsps baking powder
1/2 tsp baking soda
salt
1/4 (4 Tbsp) melted butter plus more for pan
1 cup milk
2 eggs
Preparation
Preheat oven to 400˚F. Butter and cornmeal a 8x8" glass baking dish or 12 muffin tray. Mix together the dry ingredients. Whisk melted butter, eggs and milk together. Combine wet and dry ingredients and pour into the prepared pan. Bake until golden and cracking on top - 20 to 25 minutes
