1 cup sugar

1/4 cup apple juice

6 Tbsp. butter, cut into pieces

2 tsp. vanilla extract

1/4 tsp. salt

8 Gala apples; peeled, cored, quartered

Preheat oven to 425 F. In 10- to 12-in. nonstick skillet on med., cook sugar and apple juice 2 min. or until sugar melts, stirring. Continue to cook, swirling occasionally, 6-8 min. or until deep amber. Remove from heat. Add butter a few pieces at a time, stirring until just melted. Stir in vanilla and salt. Arrange apple quarters in pan, round sides down, in 3 concentric circles. Simmer uncovered on med.- low. 40 to 45 min. or until almost tender, pressing down on apples occasionally. Transfer skillet to foil-lined rimmed baking sheet. Top with Rough-Puff Pastry, tucking in any overhangs. Bake 30 to 35 min. or until golden brown. Transfer to wire rack; cool 15 min. Flip pie onto rimmed serving platter. Serve warm.
