Ingredients

1 sheet Frozen Puff Pastry [14 oz]

1/4 cup Butter

2 Onion [thinly sliced into half moons]

2 tablespoons Brown Sugar

1/2 teaspoon Salt

1/4 teaspoon Pepper

8 ounces Goat Cheese [crumbled]

10 sprigs Thyme [fresh]

Preparation

  1. Preheat the oven to 400° and line a baking sheet with parchment paper. On a floured surface, roll out puff pastry to a 9"-x-13" rectangle, then transfer puff pastry to prepared baking sheet and poke all over with a fork.

  2. Bake until golden brown, 15 minutes, then let cool slightly.

  3. Meanwhile, in a large pot, warm Country Crock Original over medium-high heat. Add onions and cook until golden, 10 minutes, then add brown sugar and cook 5 minutes more. Season with salt and pepper.

  4. Spread caramelized onions over puff pastry, leaving a 1/2" board around the edges. Sprinkle with goat cheese and scatter thyme sprigs on top.
