Ingredients

Cake:

2 cups sugar

4 eggs

2 cups flour

1 tsp baking soda

1 tsp salt

1 1/2 tsp vanilla

1 tsp baking powder

1 1/2 - 2 tsp cinnamon

1 cup chopped pecans

3 cups grated carrots

Icing:

1 8 oz cream cheese

1 stick butter

16 oz confectioner’s sugar

1 tsp vanilla

Preparation

Mix well oil, sugar, and eggs. Combine all dry ingredients and add to first mixture. Mix well. Add vanilla, nuts, and carrots.

Pour into pan and cook 30 minutes for layers, 50 minutes in a loaf pan at 350 degrees.
