Ingredients
4 eggs
2 cups white sugar
1 1/4 cups salad oil (Crisco)
1 tsp vanilla extract
2 cups all purpose flour
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1 tsp salt
3 cups grated carrots
250 g Philadelphia cream cheese
1/4 cup soft butter
3 cups icing sugar
1 tsp vanilla extract
Preparation
CAKE: Beat eggs, then add sugar, oil and 1 tsp vanilla. Combine flour, baking soda, baking powder, cinnamon and salt together. Add dry ingredients to egg mixture. While mixing add in grated carrots. Pour into greased and floured 10" bundt pan. Bake at 350’F for 50 - 60 minutes or until toothpick in middle comes out clean. Invert on rack and cool. ICING: Beat cream cheese, vanilla and butter until smooth. Gradually add icing sugar beating until smooth. Spread on top of cooled cake.
