Ingredients
3lb. chicken whole or cut up
2 qt. water
2 tsp. salt, dash of pepper
1 -2 tubs Knorr Homestyle Stock Chicken mixed with 2 cups of water or use 2 cups chicken stock
2 cups celery, chopped
2 cups carrots, chopped
1 tart apple, chopped
1 c. onions, chopped
2 cloves garlic (I use roasted)
½ tea thyme
¼ cup parsley
½ tea chipotle or cayenne pepper
1 -2 Tbs oil
2 cups egg noodles or any favorite noodle
Preparation
In frying pan sauté garlic, onion, carrots & celery. Remove. Place chicken in kettle with 2 quarts water. Cover and cook until tender (about 2 1/2 hours). Remove chicken from kettle and strain broth. De-bone chicken and return to kettle with strained broth. Add stock, carrots, onions, celery, apple and peppers, thyme, parsley and cook until vegetables are tender. Add noodles and cook 10 minutes. Enjoy!
