Ingredients

1 pound Bacon

2 Sweet onion, chopped

10 Scallions, chopped

2 tablespoon Minced Garlic

2 quarts Chicken Broth

4 Bay leaves

1 pint Half & half or heavy cream

2 package Cauliflower, frozen

1 teaspoon Salt and pepper to taste

Preparation

Crisp bacon. Remove bacon from pan, leaving bacon fat. Add onion, half of scallions, and garlic. Saute.

Add chicken stock, bay, and cauliflower. Heat. Add cream, salt, and pepper. Heat.

Puree with hand blender. Serve with additional scallions sprinkled on top.
