Ingredients

40g Butter

25g Sifted white flour

425g Milk

Black Pepper

Preparation

Put all ingredients in a pan and heat over a medium heat While heating, whisk with an electric sauce mixer, or stir constantly with a wooden spoon Sauce is ready when it suddenly expands. Turn off heat aimmediately and keep mixing For cheese ssauce, mix cheese in to taste once base sauce is finished Careful to scrape flour from bottom of pan and mix, or sauce will be lumpy Slap in a blender if it’s lumpy at the end and reheat
