Ingredients
Crust:
2 cups crushed graham crackers
2 tablespoons sugar
1/2 cup melted butter
cinnamon
Base:
4 8oz bars of cream cheese
1 and 1/4 cup of sugar
1/4 cup cornstarch
1 tablespoon vanilla extract
2 eggs
1/2 cup sour cream
Preparation
Set oven to 350 degrees
Crust: Mix ingerdients Bake for 10 minutes at 350 Remove from oven and let cool
Base: Mix room temp cream cheese with sugar and cornstarch until creamy, scraping bowl as necessary to ensure even mixing. Blend in 1 egg at a time. Mix in sour cream and vanilla extract. Bake in water bath for ~80 min, or until edges are firm and only the center jiggles. Remove from oven and let cool for 2 hours. Cut around edges to loosen from pan. Chill in refrigerator over night.
