Ingredients

1 3/4 cups All Purpose Flour

3/4 teaspoon Baking Soda

1 teaspoon Baking Powder

1 1/2 tablespoons Granulated Sugar

1/2 teaspoon Salt

3 Eggs

1 3/4 cups Buttermilk

1 teaspoon Vanilla

1/2 teaspoon Almond Extract

1/2 cube Butter

1 cup Cherries, stemmed, pitted and chopped

1/2 cup Almonds, sliced

1 Confectioners Sugar

Preparation

Grease pan with butter.

Use confectioners sugar to suit individual Ebelskivers after cooing.

In a mixing bowl, whisk together flour, baking soda, baking powder, sugar and salt.

Separate eggs into two bowls.

Lightly whisk egg yolks, pour buttermilk, vanilla and almond extract. Mix together until combined. Pour mixture into dry mixture and combine. Batter may be a bit lumpy.

Using an electric mixture whip egg whites on high until firm.

Using a spatula gently fold egg weights into batter in two additions.

Mix Cherries for filling

Melt butter into pan before cooking

Heat pan and pour one tablespoon into each well, tracking order.

Immediately add 1/2 tablespoon cherry filling and sliced almonds in the same order.

Add one tablespoon batter on top of filling.

Turn Ebelskivers when the edges bubble and cook for an additional 2 to 3 minutes, until golden.

Remove cooked Ebelskivers and place in a large glass bowl. Keep bowl in a 150 degree oven as you repeat the process until the batter is depleted.

Just before serving and when the Ebelskivers are still warm, dust with confectioners sugar.

Warmed maple syrup may be drizzled over the Ebelskivers as individual tests dictate.
